The Sesame-Scallion Loaf - Work with me for a moment and imagine the best scallion pancake you have ever had at your favorite Chinese or Taiwanese restaurant. Now imagine that flavor in your favorite sourdough bread, finished with a crust of black sesame seeds for a satisfying crunch.
It took a long time for Chef Azikawee to figure this one out! After more failed experiments than Edison's quest for the perfect light bulb, Chef determined the sesame oil was messing up the sourdough's fermentation. But I'm glad he persisted, because people love this loaf!
Try This: Use this loaf for your favorite savory sandwich! I know, this is kind of a no brainer suggestion, but it's really good when made into a chicken sandwich.
Want to get a bit fancier? Easy, just add some Korean fried chicken, toast up a few slices of this loaf, mix Sriracha with mayo and put it all together with salad greens into a dream sandwich. That doesn't sound lazy, it's sounds damn delicious.
Or toast up a nice thick slice, top with cream cheese while the toast is still warm, then lay down thin layers of smoked salmon, sliced avocados, finely chopped green onions and a drizzle of Asian sweet chili sauce. According to a few angels I know, heaven serves this as a daily special.

Rize Up was born as a way to channel energy into something healing during the social unrest following George Floyd's death.
Started by Chef Azikiwee’s home-based quarantine sourdough project after his restaurant suddenly became a victim of covid. It quickly turned into a micro bakery in the Spring of 2020 and within a year had outgrown Azikiwee’s backyard ovens.
Founder Azikiwee Anderson felt the need to make a difference by inspiring young Black bakers to think outside the traditional (bread) box. Azikiwee knows first-hand the importance of representation.
Rize Up's breads are made with naturally-leavened, organic and sustainable high quality ingredients. Their breads feature a rare, 3-day fermentation that digests most of the wheat's natural sugars, making the bread healthier for all of us, but particularly for those avoiding carbs.
