The Wine
Crafted from 100% organic and biodynamic Nero d’Avola, Sicily’s signature grape variety. After a manual harvest and destemming, the crushed grapes are fermented in stainless steel using native yeasts. After malolactic fermentation takes place in concrete vats, the wine is aged in neutral oak casks (660-gallon) for 1 year before bottling, then in bottle for 4 months before release.
A super classic Nero d’Avola! This wine shows the signature notes of raspberry and rhubarb, lifted by a refreshing, vibrant acidity that is typical of these colder sites. An amazing companion to grilled meats, barbecue, fettuccine alla Bolognese, lamb roasted with garlic and herbs and medium ripe cheeses.
The Winery
This wine comes from Comporeale, just outside of Palermo in Sicily. The vines are about 2000 feet above sea level, planted on a sandstone ridge overlooking an wide valley opening to the northern coast of Sicily. The region is blessed with ideal growing conditions, and winemaking dates back thousands of years. The hot daytime temperatures are mitigated by the cooling influence of the Mediterranean Sea (less than 15 miles), and the Northern Mistral winds.
