Pecorino Romano is a hard, salty Italian cheese made from sheep's milk (pecora is 'sheep' in Italian). The first documented reference to this cheese dates back over 2000 years in a document from Pliny the Elder, one of the Roman era's best documentarians. Today the production is limited to the Lazio region around Rome and the sheep flocks on neighboring Sardinia just to the west.
A popular lateral for Pecorino would be the more famous Parmigiano Reggiano, though Pecorino is preferred for some dishes because it more enthusiastic aromatics, its distinctive saltiness and a sharp note that Parmesan does not have. Pecorino is preferred on pasta dishes featuring highly flavored sauces and is the main ingredient in the deceptively simple dish, spaghetti calla cacio e pepe.
