The Wine

"Make a gastronomic wine, a gourmet rosé." That was the challenge given this winemaker. Ollieux Romanis wanted this wine to reflect terroir, not simply fruit.  

To achieve this, they left the wine on its lees as if it were one of their white wines. The gamble turned out well, resulting in this delicate rosé that stands apart from the robust rosés of the region.

A blend of Grenache Gris, Grenache Noir and Cinsault (80% / 10% / 10%)
