The Cheese
Made from a blend of cow's, goat's, and sheep's milk. Crafted at a dairy near the town of Alba in the northern Italian region of Piemonte. Visitors to the small village of Bosia can visit the birthplace of this cheese - a family of cheesemakers dating back to 1881.
Tasting Notes: When the cheese is in good condition, the rind will be lightly bloomed. At the center though, the cheese is creamy and smooth. Some have described the cheese as 'fluffy' because its curds are drained not pressed, then aged in the mold for just 10-15 days before packaging.
The aromas are a bit funky but not pungent, with flavors of earth and grass and hints of citrus. Closer to the rind the cheese has goatier flavors, while the softer center shows more citrus notes. It's the blend of three milks that creates such complexity.
Wine Pairing: We recommend this cheese among a handful that are ideal for pairing with sparkling wine, especially a really good one that has seen more than a year on the lees!
