The Wine
The fruit for Gramona's "La Cuvee" comes from 13 members of Aliances per la Terra, an organization established to promote organic and biodynamic farming in the Penedès region of Spain. All 13 growers are certified organic, and 12 are certified biodynamic.

The most "youthful" of the sparkling wines released by Gramona, La Cuvee is a blend of 45% Xarel.lo, 45% Macabeu, and 10% Parellada from a total of 26 acres of vineyards. The grapes are hand-harvested, fermented separately in tank and aged there for six months prior to blending and bottling for secondary fermentation in the bottle. This wine is then aged for a minimum of 30 months sur lattes (on the fine lees) and finished with a dosage of between 4-6 g/L before release.

About 6,700 cases produced.

The Winery
Gramona’s history is long and storied with the property being a quality reference point in the Penedès for decades. As far back as 1816 a member of the family has been making wine. The Gramona family name was first put on bottles of “Cava Champagne” in 1921. Today the house is one of the few remaining family-owned estates in the region, most having been hoovered up by large corporations in the last few decades.

Today, Jaume Gramona is in charge of viticulture and winemaking. Grapes are sourced from vineyards the Gramona family owns as well as the fruit from growers under the Alianzas por la Terra, as mentioned above.

Traditionally, Gramona's wines receive longer sur-lee aging than most Cavas - 86% of Cavas are released after 9 months while Gramona ages for a minimum of 30 months. Long considered a pioneer for their work in the cellar and for farming organically and biodynamically, they are now promoting a higher order of sustainability by reducing their carbon footprint – using geothermic energy and recycling all the water used at the estate.
