Jumila (Murcia) Spain is widely known for its goat milk cheeses because of the Murcian-Granadine breed of goats. Not only is this is one of the best milk producing species, it has also adapted nicely to the warm, dry climate in this part of Spain. And it is from this milk that Cana de Cabra is made by Central Quesera Montesinos for Mitica.
Aged for ~21 months, it is similar to French Bucheron, a cheese known for its fudgy, creamy texture with buttery notes and subtle muskiness. As it ripens, tangy and mushroom undertones become more apparent.
Perhaps a substitute for a more complete meal on a warm day, and a perfect pairing with a crisp, dry white wine (or bubbles!), salads, marcona almonds and fig spread.
